Base: 560 international food critics. In response to concerns that the London-based magazine's list was too UK-centric, in 2006 the magazine appointed panels in 20 world regions with each panel chaired by a judge.

Notes: 'El Bulli' (owned and managed by Ferran Adria and located in Girona on Spain's Cost Brava) was voted best restaurant in the world, having been runner up in 2005. 'El Bulli' is only open for six months of the year and is usually fully booked one year in advance. 'The Fat Duck' (located in in Berkshire, England and run by Heston Blumenthal) was runner up having been number one in 2005. Spain, not particularly noted for its cuisine, took three positions in the top ten, although it should be noted that the Chefs choice was the French restaurant 'Pierre Gagnaire' located in Paris.
